Maple Syrup
Sleepy Hollow (Kasie and Eli, Runnin' Saps Mapleworks) started making maple syrup for use in our inn in 2009. Inn guests can sleep well knowing that when you wake up at Sleepy Hollow, your pancakes will be served with our fine Sleepy Hollow maple syrup. Here's our production history:
2009: 270 taps making 37 gallons of syrup
2010: 350 taps making 63 gallons of syrup
2011: 600 taps making 165 gallons of syrup
We are now NOFA certified organic maple syrup producers. What is organic syrup? It is much more than just no pesticides or no synthetic fertilizers.... The certification looks at all parts of the maple operation, from sustainable forest management to the type of tank the sap is collected in to the most responsible number of taps for each tree.
Our syrup is for sale at the inn or by mail order in a variety of quantities. All syrup for sale below is from the 2011 season.
